Our Story
Built in a Backyard. Perfected by Obsession.
Knuckle Dragger Jerky didn't start in a factory. It started with a smoker, a bad day at work, and a stubborn refusal to settle for mediocre meat.
How It Started
It was a Saturday. The smoker was already hot. And after years of buying jerky that tasted like cardboard soaked in soy sauce, enough was enough.
We started experimenting — real wood, real marinades, real patience. No shortcuts. No liquid smoke. No mystery ingredients you can't pronounce. Just beef, fire, and time.
What came out of that first batch was something different. Friends wanted bags. Then their friends wanted bags. Then it stopped being a hobby and started being something real.
Small Batch Only
We don't mass produce. Every batch is made in small runs so we can control every step — the marinade, the smoke, the pull. When it's gone, it's gone.
Real Wood Smoke
Applewood. Hickory. Cherry. We use actual wood, not liquid smoke or flavor additives. You can taste the difference. That's the whole point.
Zero Apologies
Bold flavors, real ingredients, no filler. We're not trying to be everything to everyone. We make jerky for people who actually give a damn about what they eat.
What Makes It Different
Most commercial jerky is made fast, cheap, and in bulk. Ours isn't. We start with premium thin-sliced beef, marinate it for 24 hours minimum, then slow-smoke it over real hardwood until it hits that perfect balance of chew, smoke, and flavor. No shortcuts. No compromises. Just the best damn jerky you've ever had.
